Lunch On The Go: Why meal prep is so important
Meal planning and prep is key to making lasting healthy changes. I made these up (actually 5 of them) in as long as it took me to place chicken breasts and the vegetables on baking sheets. I baked them all at the same time and divided them into these containers. I covered them and threw them in the freezer for my husband to take to work as he gets tired of salads over and over. So good, nutritious and easy!
What You'll Need
- Chicken Breast and any vegetables you like or have on hand. I used Broccoli, Onions, and Diced Sweet Potatoes.
- Disposable food containers that can be frozen and heated OR glass containers.
What You'll Do
- On a large baking sheet, cover with parchment and spray with coconut oil cooking spray. Add 4 chicken breasts and the vegetables on the sheets.
- Bake at 425 degrees F or until done.
